My version of the crispy fried chicken

To complement the chicken tinola, fried chicken is always a good choice. Expect the hubby and the in-laws to over-eat as simply this combination of dishes is just perfect especially on a chilly and rainy day.
This fried chicken is crispy and so full of flavor. The use of the citroen juice ensures that the flavors penetrate the chicken and not just on the outside as with most fried chicken.
My version of the fried chicken is easy and simple, the ingredients are few and very basic so that the flavors remain distinct.
Ingredients:
1 kilo chicken thighs, cut in pieces
6 cloves garlic, finely chopped
6-8 tbsps. fish sauce
Black pepper, finely grounded
Juice from 1 citroen
Cooking oil
Cooking Instructions:
1. Marinate the chicken for an hour or two in the following: fish sauce, lemon juice, finely chopped/pressed garlic, ground pepper.
2. Fry the chicken over medium heat until brown and crispy.



Mmmm. A great twist to our southern fried version here in Indiana. What is the citroen and what does it do for the chicken. Do you think one could find that in Indiana?
You can use the green lime instead of the yellow citroen. The lime or citroen makes the flavor sink deep into the meat.
I was wondering about the citroen, too! i remember this is how my mom would make fried chicken when we lived in the Philippines.
I would use our native “kalamansi” when in Philippines instead of citroen.

This is still pretty old-fashioned especially in the age of deep fryers. I prefer the old ways and the traditional taste of fried chicken.

Malou, this looks so delicious! and so tempting. I have a few questions regarding the use of oil. What type of oil do you use? How much oil you use? Do you re-use it? I mean, do you deep fry 4 chicken pieces, take them out, then fry another 4 and so on until all your chicken pieces are done? and the last question. How do you dispose of it?

Thanks a lot, Imperio. I used the usual sunflower oil. Coconut oil or any other oil for frying will also do. I used the same oil for all the chicken…the one I used from beginning till all the chicken are fried. Then I dispose of the oil after that. You can dispose of the oil in the toilet if you like.
